Shinshu-gyu is Japan's apple-fed wagyu. In the orchards of Matsumoto City, nestled in the Japanese Alps of Nagano Prefecture, a small population of cattle are raised on a diet that includes the region's signature fruit. The result is a noticeably sweeter aftertaste, a smoother fat profile, and a richness you won't find anywhere else in our catalog.
Once known simply as Shinshu, this mountainous region is one of Japan's most celebrated wagyu producers — and one of its most limited. Certified Shinshu-gyu is rarely seen outside Japan. The fat melts in the mouth and pairs the signature wagyu richness with an unexpected sweetness on the finish.
With over 300 brands of wagyu throughout Japan, less than 5% of all US-imported A5 are labeled as BMS 12. This is one of them.
