    Shinshu Wagyu or Shinshu-gyu is one of Japan’s premium artisanal wagyu brands and is also one of our limited top tier selections. Shinshu-gyu hails from Matsumoto City in Nagano Prefecture. Home to the Japanese Alps, this mountainous region once known as Shinshu is famous for its apple orchards. A unique method used in Matsumoto are famous for eating apples as part of their primary diet. This diet gives the local wagyu in Nagano a moderate to higher fat content and a sweeter aftertaste. Due to their unique diet, the beef is said to have a stronger flavor than other types of wagyu, along with a sweet aftertaste that apparently comes from their diet of apples. The fat is smooth, melts in the mouth, and is extremely soft with excellent flavor. With such a small production, this remains one of our most limited and rare wagyu items.

    With over 300 brands of wagyu throughout Japan, each with its distinct and unique flavor characteristics, less than 5% of all US imported A5 are labeled as BMS 12.

    Each portioned piece is individually packaged and vacuum sealed. In order to maximize freshness during delivery, we blast freeze our cuts and ship them with dry ice in a reusable insulated box. Thawing is natural and may occur.
