Iberico de Bellota

Acorn-fed black pigs from Spain's dehesa regions — the Wagyu of pork. Higher unsaturated fat content, deeper marbling, and a nutty, complex flavor that comes from the acorn diet during the final months before harvest.

Kurobuta (Berkshire)

The Japanese-style Berkshire — darker, more marbled, more flavorful than commodity pork. Often used by high-end American restaurants when they want "the best pork on the menu."
