F1 Kozatsu

F1 Kozatsu is a specialty Japanese Wagyu lineage from Japan's Rokko region (Hyogo Prefecture) — a Japanese hybrid bred for a cleaner, leaner texture and an approachable richness that sits outside the standard A1–A5 grading ladder. It is unmistakably Japanese in character, but a different eating experience from pure A5.

What Makes F1 Kozatsu Different

Most American shoppers know Japanese Wagyu through the A-grade ladder (A3 → A4 → A5), where the score is driven primarily by intramuscular marbling. F1 Kozatsu sits outside that ladder — a Japanese hybrid lineage developed specifically to produce a more balanced eating experience: clean beef flavor, tender texture, and just enough marbling to be unmistakably Japanese Wagyu without overwhelming richness.

Who Should Try F1 Kozatsu

If you've found A5 too rich, or if you want a Japanese Wagyu cooking experience that pairs better with bigger portions and reverse-searing technique, F1 Kozatsu is the answer. Many of our customers move between F1 Kozatsu and A4 based on the occasion.
