Unlike traditional searing, which starts with a hot pan and room-temperature meat, the cold sear method flips the script. You place a cold steak in a cold pan, then bring the heat up gradually — flipping often — to build a crust while cooking evenly from edge to edge.
It’s ideal for non-stick or seasoned pans (no stainless steel) and works especially well for fatty steaks like Wagyu, which render in their own fat without needing oil.

- 1.25"–1.5" thick steak (ribeye, striploin, etc.)
- Non-stick or well-seasoned cast iron pan
- Tongs
- Paper towels (for patting dry)
- Optional: meat thermometer
🔥 Step-by-Step: Cold Sear Method
- Don’t salt the steak beforehand. Salt draws out moisture, which affects your sear. Pat the steak dry with paper towels.
- No oil needed. The steak cooks in its own fat — especially if it’s Wagyu.
- Place the steak in a cold pan. Turn the heat to high.
- Cook for 2 minutes on the first side.
- Flip and cook for another 2 minutes.
- Flip again, turn the heat to low, and cook for 1 minute.
- Flip one last time and cook for 1 more minute.
- Rest for 5 minutes before slicing and serving.
✔️ For thicker steaks (1.5"+): Add another round of 2-minute sears and 1-minute finishes on each side.
