Frequently Asked Questions

What does Gold Label BMS 8/9 mean?

Gold Label is Ligma Provisions' tier for Australian Wagyu graded BMS 8 to 9 on the AUS-MEAT scale. That is roughly comparable to Japanese A4 marbling density β€” dense, evenly distributed intramuscular fat with a buttery texture.

How does Gold Label compare to Japanese A5?

Japanese A5 (BMS 8–12 on the Japanese scale) is more intensely marbled and richer. Gold Label delivers most of the buttery texture with a cleaner, more beef-forward flavor and costs significantly less per ounce. Many customers find Gold Label easier to eat as a full portion.

Is Gold Label Wagyu Halal?

Yes. All Australian Wagyu at Ligma Provisions, including Gold Label, is Halal certified with full chain-of-custody documentation.

What does F4 Purebred mean?

F4 Purebred Australian Wagyu carries roughly 94% Japanese Wagyu genetics, achieved through four generations of breeding. F1 is a 50/50 Japanese-Angus cross. Full Blood is 100% Japanese genetics.

How should I cook Gold Label Wagyu?

High heat, short cook. Sear 2 to 3 minutes per side for a 1-inch steak, targeting medium-rare to medium so the intramuscular fat renders. Salt after searing, rest 5 minutes, slice against the grain.
