Are Ligma Provisions sausages Halal?

What is Merguez sausage?

Merguez is a North African lamb sausage seasoned with harissa, cumin, garlic, coriander, and paprika. It is traditionally grilled or pan-seared and is also used in tagines and couscous dishes.

How do you cook specialty sausages without splitting the casing?

Medium heat, not high. High heat causes the interior to expand faster than the casing can stretch. Cook slowly, turning often, and avoid piercing the casing — piercing drains the fat that keeps the link juicy.
