Flank is one of those cuts that gets slept on. Beefy, chewy, packs a punch — but conventional flank can be tough. Ours doesn't have that problem. This is Australian Wagyu Gold Label at BMS 8/9, F4 Purebred (75%+ Japanese Wagyu bloodline), so the marbling smooths out the chew and adds a butter-soft finish you don't get from grocery-store flank.

Think of it as the Wagyu upgrade to Skirt: same beef-forward flavor profile, more marbling, longer clean muscle. Cut against the grain, sliced thin, and this thing carries a carne asada spread, a tataki plate, or a slice-and-serve dinner over rice.

Best cooking methods: High-heat sear (cast iron, grill, or open flame over charcoal), or thin-slice for stir-fry, tacos, and carne asada. Rest 5 minutes, slice thin against the grain.

Do it Ligma style: fire this up over charcoal, hit it with chimichurri.
