Our Blue Label New York Strip represents the highest level of marbling we offer, with an exceptional BMS 9+ score. Raised from elite Japanese Wagyu genetics in Australia, these cattle produce steaks with deep intramuscular marbling that cooks into a rich, buttery bite worthy of the finest steakhouse.

But numbers alone don’t earn the Blue Label.

At Ligma Provisions, every striploin must pass our visual marbling inspection. If it doesn’t meet our standard for density, distribution, and overall appearance, it will never wear the Blue Label — even if the paperwork says 9+. Because if you're not convinced, than NEITHER ARE WE.

The result is a steak that melts like A5 Wagyu, yet still delivers the bold, beefy character and satisfying texture of a classic New York Strip.

Expect intense marbling, deep flavor, and a steakhouse-level experience right off your grill.

Extremely limited and even rarer than our Gold Label selection, this is Wagyu reserved for those who want the very best. This is an amazing balance of beef and high level marbling.

This product is purebred meaning 75% or higher Japanese genetics compared to traditional F1 50/50 Wagyu mix.

Each portioned piece is individually packaged and vacuum sealed. In order to maximize freshness during delivery, we blast freeze our cuts and ship them with dry ice in a reusable insulated box. Thawing is natural and may occur.

• We cut and vacuum-seal each steak in our USDA-approved facility (No 3rd Party)

• Ships frozen with insulated foam container with dry ice. Thawing is natural during transit.

• Refrigerate in the coolest part of your fridge if you intend to enjoy your beef within 48 hours.

• Freeze if you plan on eating on a future date - we recommend consuming within 1 month for freshness. Thaw in the coldest part of your refrigerator 24 hours before cooking.
