A5
Japanese A5 Wagyu is the highest grade Japan awards — a perfect marbling score paired with the highest meat quality classification. Every A5 cut at Ligma is certificate-backed, traceable to a specific Japanese prefecture, and hand-portioned in our USDA-approved facility.
What "A5" Actually Means
The "A" represents the yield grade (highest = A). The "5" is the meat quality grade based on marbling (BMS), color, firmness, and fat quality. A5 Wagyu has a Beef Marbling Score between 8 and 12 — buttery texture, melts at body temperature, and a richness so concentrated most people serve smaller portions than they would with USDA Prime.
A5 Brands We Carry
Our A5 selection rotates constantly across 200+ Japanese producers — Miyazaki Gyu, Satsuma (Kagoshima), Sanuki Olive-Fed (Kagawa), Shimane, Takamori "Drunken Wagyu" (sake-fed), and many more. Every shipment includes the official certificate of authenticity.
How to Cook A5
A5 is best cooked simply — high heat, short sear, no oil. Less is more. See our complete A5 cooking guide for technique-by-cut breakdowns.
