What "A5" Actually Means

The "A" represents the yield grade (highest = A). The "5" is the meat quality grade based on marbling (BMS), color, firmness, and fat quality. A5 Wagyu has a Beef Marbling Score between 8 and 12 — buttery texture, melts at body temperature, and a richness so concentrated most people serve smaller portions than they would with USDA Prime.
