Japanese Wagyu Grades Explained

A5 Japanese Wagyu sits at the top of Japan's grading system — BMS 8–12 marbling, the buttery, melts-in-your-mouth experience most people picture when they hear "Wagyu." A4 Japanese Wagyu (BMS 5–7) delivers cleaner beef flavor with still-extraordinary marbling, often at 20–30% less per ounce. A3 Japanese Wagyu is the entry tier — BMS 3–4, still certificate-backed and Japan-grown, at the most approachable price point.

F1 Kozatsu — The Hidden Gem
