The letter is the yield grade (A is highest). The number is the meat quality grade from 1 to 5, based on marbling, color, firmness, and fat quality. A5 is the highest possible grade and corresponds to a Beef Marbling Score (BMS) of 8 to 12.
What is the difference between A5 and A4 Wagyu?
A5 has a BMS of 8–12 and A4 has a BMS of 5–7. A5 is richer, more buttery, and melts at body temperature. A4 has more recognizable beef flavor with still-extraordinary marbling, and typically costs 20–30% less per ounce than A5.
