Ranchera — also called bavette or sirloin flap — is a flat, wide cut from the bottom sirloin, butterflied to maximize surface area for marinades and quick high-heat grilling. It's the cut Mexican carnicerías build entire menus around, and it's about to ruin your old flank steak for you.

Here's the catch with most ranchera: lean and chewy. Traditional recipes lean hard on marinades because they need them. Our version doesn't. Australian Wagyu Gold (BMS 8/9, F4 purebred) means real marbling running through every slice, so you get the prominent grain and rich beefy character ranchera is famous for, plus the buttery tenderness Wagyu delivers. Marinate it if you want, or just hit it with salt, pepper, and high heat.

How to cook it: Hot and fast. Cast iron, grill, or plancha — anything that gets to 500°F+. Cook to medium-rare, rest 5 minutes, slice thin against the grain. Pile into warm tortillas with onion, cilantro, and a squeeze of lime. Or skip the tortillas and serve sliced over rice with chimichurri.
