A two-plus-pound Blue Label Wagyu T-Bone is the centerpiece, built to be sliced off the bone and split across the table. An A5 Satsuma NY Strip block from Kagoshima brings Japan's richest marbling in tasting-size bites. Hickory Smoked Alligator Andouille rounds out the board with a little Cajun heat.

• Australian Wagyu T-Bone Blue (36-38oz) — BMS 9+ Blue Label, the top of the Australian ladder. NY Strip on one side of the bone, filet on the other — two premium steaks in one cut. F4 Purebred, Halal Certified.
• A5 Satsuma NY Strip (7-8oz Block) — Kagoshima Prefecture, Japan. Japanese Black (Kuroge) lineage, marble score 10-12, 1st-place Wagyu Olympics winner. Sear hot, slice thin, share. Certificate included.
• Hickory Smoked Alligator Andouille Sausage (1 lb) — four 4oz links of lean alligator and pork, Cajun-seasoned and slow-smoked over hickory in natural casings. Made in the USA.

Each portioned piece is individually packaged and vacuum sealed. In order to maximize freshness during delivery, we blast freeze our cuts and ship them with dry ice in a reusable insulated box. Thawing is natural and may occur.
