Description

  • Marbling Score: 4-5
  • Grade: A3
  • Kagoshima Prefecture, Japan
  • One Wagyu NY Strip Steak

Discover A3 Mother Beef, a rare single-origin Wagyu from Hiramatsu Farm in Kagoshima, Japan. Unlike typical Wagyu, these steaks come from mature “mother cows” raised for 7+ years, delivering a deeper, richer beef flavor and a signature dark wine-red color.

Graded A3, this NY Strip strikes the perfect balance between marbling and true beef character. Hiramatsu Farm controls every detail — from growing its own feed to an extended 7-8 month finishing period — ensuring exceptional tenderness and umami in every bite.

Japanese Wagyu that is a little less rich but full of beefy flavor you'd expect from this quality steak! Savor a steak that tells the story of time, patience, and craft.

Cooking Suggestions

To truly savor this NY Strip:

  • Bring to room temperature before cooking.

  • Season simply with coarse salt and fresh cracked pepper to let the beef speak.

  • Sear hot & fast — medium-rare preserves juiciness and avoids over-rendering the marbling.

  • Let rest for 5-7 minutes off heat; slice against the grain.

A must try!

Received an 8 ounce strip as part of the mystery bundle. It was an end cut from the sirloin side. That mattered not, this was some of the best tasting beef I’ve ever had. Perfect balance of fatty and flavor. The maturity of the cow can be tasted in this one!

I had high hopes...

I had high hopes for this, never having had a big piece of Japanese Wagyu beef. It did not disappoint. It was incredibly marbled and it was perfectly vacuum packed. I selected A3 because I thought that I would be able to eat a whole steak. On that point I was wrong. I reverse seared half of a 10 oz steak to medium rare and then seared it over high heat for 15 seconds each side. The sear and crust were perfect. It was so rich that I regretted cooking that large of a piece. It was a treat but I think that perhaps the Australian Wagyu might allow me to have a larger piece. Sorry for rambling; overall, it was wonderful and I highly recommend it.

Shipment arrived on time and In good shape. Both items looked as good, or better, than the pics on the site.

I was especially excited to get the “mother beef” as this is something I’ve wanted to try, but didn’t know if it would ever be available in the US. I’m saving it for my birthday in three weeks (or at least I’m going to try😉). I’ll post my review once I’ve enjoyed it.
