Zabuton

The Zabuton (also known as the Denver Steak) is the cut chefs order for themselves — a small, heavily-marbled steak hidden inside the chuck primal. Tender, beefy, and at 30–50% less than Ribeye, it's one of the best value cuts in Wagyu.

Why "Zabuton"

The Japanese name means "cushion" — a reference to its pillowy texture. In Japanese Wagyu butchery, the Zabuton is a highly prized cut; American butchery historically threw it into ground beef. Once you taste it, you'll understand the Japanese got it right.

Grades Available

We carry Zabuton in Australian Wagyu Gold and Silver Label. Limited availability — each Zabuton yields only ~2 lb of usable steak per cow.

Cooking Tips

High heat, fast. Slice against the grain after cooking. Excellent for tacos, hot pot, or as a quick weeknight steak.
