Blue Label is the top of our Australian ladder. Above Gold, above Silver, above Green — BMS 9+ is as far as Australian marbling is officially scored, and it is the closest Australian Wagyu gets to Japanese A5. Not every cut is offered in Blue, and not every program produces it.
This lot comes from Joker, a fullblood Australian Wagyu program. Fullblood means 100% Wagyu genetics — no Angus, no crossbreeding anywhere in the pedigree. That is a meaningfully different animal from the F1 (50%) and even the F4 purebred (75%+) cattle behind most Australian Wagyu on the market, and it is the reason this tier of marbling is achievable at all.

How to cook it: hot cast iron or grill, no added fat, 2-3 minutes a side to medium-rare. Salt only. Rest briefly, then slice against the grain. At this marbling level the fat does the work — do not crowd it with seasoning.
