The whole tenderloin is the centerpiece cut, and ours is graded Silver Label Fullblood from the Roam program — the same grass-fed program behind our Ribeye and NY Strip, just in its most prized muscle. Buttery, lean, and impossibly tender, with the subtle nuttiness only grass finishing delivers.
We sell this Side Muscle Off (SMO) so you've already got the chain removed and most of the silverskin trimmed away. From there, it's a short knife pass to fully clean and portion: roast it whole as a dinner-party centerpiece, or slice into 6–10 filets and freeze the extras. Either way, the per-lb value here significantly beats buying the same cut pre-portioned.
A few cooking notes: grass-fed Wagyu is leaner than grain-finished, so cook to medium-rare (130–135°F internal) for the best texture. Reverse-sear or sous-vide both shine on a whole tenderloin. For filets, a hard sear in cast iron + butter baste is hard to beat.

Each piece is individually packaged and vacuum sealed. In order to maximize freshness during delivery, we blast freeze our cuts and ship them with dry ice in a reusable insulated box. Thawing is natural and may occur.

• We cut and vacuum-seal each steak in our USDA-approved facility (No 3rd Party)
• Ships frozen with insulated foam container with dry ice. Thawing is natural during transit.
• Refrigerate in the coolest part of your fridge if you intend to enjoy your beef within 48 hours.
• Freeze if you plan on eating on a future date - we recommend consuming within 1 month for freshness. Thaw in the coldest part of your refrigerator 24 hours before cooking.
