Filet Tenderness. Wagyu Indulgence.

Some cuts fly under the radar—but those who know, know.

The petite tender, also known as the teres major, is often compared to filet mignon for its remarkable tenderness. Hidden within the shoulder, this rare muscle does very little work, allowing it to develop a silky, incredibly tender texture that rivals the most prized steaks.

Now elevate that tenderness with the unmatched luxury of Japanese A5 Wagyu.

Unlike larger Wagyu cuts that deliver overwhelming richness, the A5 petite tender offers refined balance—delicate marbling, elegant flavor, and a melt-in-your-mouth texture that feels almost effortless. It’s leaner than ribeye but still carries the unmistakable buttery depth that defines true A5 Wagyu.

Chef’s Cooking Tip

The petite tender shines with simple, high-heat cooking.

Season lightly with salt, sear in a hot pan for about 45–60 seconds per side, then rest briefly. Slice medallion-style or serve whole for a beautiful steakhouse presentation.

Minimal seasoning. Maximum Wagyu flavor.

At Ligma Provisions, we hand-cut every steak ourselves. No factory-cut portions, no mass processing—just carefully selected A5 Wagyu broken down and portioned fresh by our butchers so every piece meets our visual marbling standards.

And now it’s yours.
