This is the Rib Cap Lifter or also known as Lifter Blade Meat - a thin muscle removed from the outside of the Rib. Not to be confused with the Spinalis Dorsi Steak. This is great bang for your buck with great marbling and a bold steak taste. Take your time cooking this one, I can be tough if cooked improperly.
