With a marble score of 6-7, our Silver Label Wagyu delivers an experience for those that seek a robust wagyu beef flavor without being overwhelmed by the richness found in our Gold and Blue Label Wagyu products. 

Carefully selected Tajima Wagyu bloodlines are combined with British and European dam lines. Then, only the best grass grazing regions across Tasmania, Gippsland and the Limestone Coast of South Australia are selected. Those known for their year round rainfall, volcanic soils and ideal climate for growing high quality pasture. Lastly, 30 months of patience, allowing cattle to grow naturally in a relaxed environment- much longer than typical beef programs.

Altair's grass-fed Wagyu combines traditional marbling and sumptuous texture with the clean minerality of grass-fed pasture-raised cattle. This unique breeding creates distinctive, melt-in-your-mouth flavor and a luxurious culinary experience.

Each portioned piece is individually packaged and vacuum sealed. In order to maximize freshness during delivery, we blast freeze our cuts and ship them with dry ice in a reusable insulated box. Thawing is natural and may occur.

• We cut and vacuum-seal each steak in our USDA-approved facility (No 3rd Party)

• Ships frozen with insulated foam container with dry ice. Thawing is natural during transit.

• Refrigerate in the coolest part of your fridge if you intend to enjoy your beef within 48 hours.

• Freeze if you plan on eating on a future date - we recommend consuming within 1 month for freshness. Thaw in the coldest part of your refrigerator 24 hours before cooking.
