Kobe beef derives from a specific breed of cattle called Tajima, which is raised in the Hyogo Prefecture of Japan, with Kobe being its capital city. What sets Kobe beef apart is the meticulous and regulated way in which these cattle are raised and the resulting marbling and tenderness of the meat.
The production of Kobe beef is highly regulated by the Kobe Beef Association, ensuring that only cattle meeting specific criteria can be labeled as Kobe beef. Authentic Kobe beef must be of Tajima bloodline and fully raised in Hyogo Prefecture. Authentic Kobe Beef is stamped with the mark of Japanese chrysanthemum by the Kobe Beef Association and must be graded A4 or A5. This is graded A5 with a BMS of 12.
