Kumamoto cattle from the southern island of Kyushu is limited to a population of 60,000 head of cattle and are known to graze around the sacred volcano of Mt Aso - the largest active volcano in Japan. The volcano provides mineral-rich underground water for the cattle. Along with a managed feed program of local rice and straw, the health of Kumamoto cattle are observed day and night to ensure health of each cow. They are also known to have a higher percentage of monounsaturated fat compared with any other breed, resulting in a rich buttery flavor with a tender bite. Fun fact, Kumamoto is also home to the only free grazing cattle in Japan!

Each portioned piece is individually packaged and vacuum sealed. In order to maximize freshness during delivery, we blast freeze our cuts and ship them with dry ice in a reusable insulated box. Thawing is natural and may occur.
