Satsuma Gyu beef is considered to be one of the most richly marbled and most appetizing streaks of fat a steak can have and is also the 1st place Wagyu Olympics Competition winner in Japan.
A major factor in the quality of Satsuma Gyu steaks is the uncompromising regulations the region uses for its cattle. Kagoshima is the largest beef producing prefecture in Japan, this region has temperate climate with plentiful grass land for rasing cattle. To be labelled Satsuma Gyu, cattle must meet the following standards upon slaughter:
- Tajima-Gyu (Japanese Black) born within Kagoshima Prefecture.
- Fed on a farm within Kagoshima Prefecture.
- Meat processed within Kagoshima Prefecture.
- Marbling rating (BMS) of 6 or higher on a 12 point scale.
- Meat quality rating of 4 or higher on a 5 point scale.
Because of these strict standards, only average 3,000 head of cattle qualify as authentic Satsuma Gyu cattle each year.

Each portioned piece is individually packaged and vacuum sealed. In order to maximize freshness during delivery, we blast freeze our cuts and ship them with dry ice in a reusable insulated box. Thawing is natural and may occur.

• Ships frozen with insulated foam container with dry ice. Thawing is natural during transit.
• Refrigerate in the coolest part of your fridge if you intend to enjoy your beef within 48 hours.
• Freeze if you plan on eating on a future date - we recommend consuming within 1 month for freshness. Thaw in the coldest part of your refrigerator 24 hours before cooking.
